Roasted Chicken and Mozzarella Salad

Ingredients:

  • 4 ounces baby arugula
  • 4 ounces baby spinach
  • 2 cups sliced rotisserie chicken
  • 4 ounces fresh mozzarella, sliced into bite-size pieces
  • ½ cup sliced roasted red pepper
  • ¼ cup corn off the cob
  • ¼ cup pitted Kalamata olives
  • 1 teaspoon balsamic vinegar (Vesper Brothers Balsamic Vinegar recommended)
  • Salt and pepper to taste

Directions:

  1. Combine all the ingredients except for the balsamic in a salad bowl.
  2. Mix thoroughly.
  3. Drizzle Balsamic over salad.

Serve immediately.
