Products and Services 

Severino proudly creates a wide variety of both fresh and dry artisanal pasta, made with 100% semolina flour, without any preservatives, artificial colorings, or flavors.  At the Co-Op, we sell Severino products in three major categories: traditional dry boxed pasta, many kinds of frozen fresh pasta, and in our bulk foods aisle.  

If you’re looking for suggestions, our grocery manager particularly loves Severino’s fresh frozen pierogis, and our produce manager loves their orzo in the bulk aisle!

History 

The founders of Severino Homemade Pasta, Joseph and Anna Maria Severino, learned to make pasta from then 34-year-old Umberto Casoli when his shop, Il Pastificio Casoli, was still located in Rome (the successful business has since gone on to be inherited by two generations of Casolis, itself!).  The Severinos were the grateful recipients of Umberto’s experience, which he shared on the condition that they return to the United States and make pasta!   

In the more than 50 years since the store opened in 1971, Severino Pasta has grown from a small family pasta shop to a business partnered with Whole Foods and sells on a national level. 

Sustainability 

Severino Homemade Pasta was founded in Westmont, New Jersey, which is only 23 miles from Swarthmore Co-Op.  The company is still located in Westmont, making it one our vendors with the shortest distance between production and point of sale.  Reducing “food miles” in this way—eating local, in other words—is one significant way to reduce your carbon footprint.   

Purchasing Severino from our bulk foods aisle also reduces the amount of packaging material used to bring your food home, especially if you bring your own container, which our cashiers will happily help you tare.  In addition to saving on packaging, buying in bulk saves you money!  While boxed pasta is often $0.24 to $0.54 per ounce, pasta purchased from the bulk aisle often costs closer to $0.12 to $0.17 per ounce.  For a pound of pasta, that’s a difference of more than six dollars!

About the Author

Stephanie Bonner (she/her) graduated from Oberlin College with majors in Biology and English and a minor in Environmental Studies, with significant research experience in insects, particularly native bees.  She completed a permaculture design course and worked for a range of companies including a nonprofit permaculture demonstration site, an organic vegetable CSA and wholesale farm as the CSA manager, and she has extensive experience as an editor and project manager in academic publishing. Stephanie is committed to sustainability, particularly regarding energy, transportation, waste, and agriculture.
