Ingredients:
- 4 ounces baby arugula
- 4 ounces baby spinach
- 2 cups sliced rotisserie chicken
- 4 ounces fresh mozzarella, sliced into bite-size pieces
- ½ cup sliced roasted red pepper
- ¼ cup corn off the cob
- ¼ cup pitted Kalamata olives
- 1 teaspoon balsamic vinegar (Vesper Brothers Balsamic Vinegar recommended)
- Salt and pepper to taste
Directions:
- Combine all the ingredients except for the balsamic in a salad bowl.
- Mix thoroughly.
- Drizzle Balsamic over salad.
Serve immediately.
