Bacon Wrapped Meatloaf

Ingredients:

  • 3 lbs Meatloaf Mix (Ground Beef, Pork, and Veal)
  • 2 Cloves Garlic, Minced
  • 1/2 Medium White Onion, Diced
  • 1/2 Cup Celery, Diced
  • 1/2 Cup Carrots, Diced
  • 1 Tablespoon Dry Mustard Powder
  • 2 Large Eggs
  • 1 Cup Panko Breadcrumbs
  • 1/4 Parsley, Chopped
  • 1 tsp. Salt
  • 1/2 tsp. Black Pepper
  • 8 strips Bacon

Directions:

Preheat oven to 400F. Combine all ingredients in a large bowl except for the Bacon. Mix well to combine. Lay 8 strips of Bacon side by side on a piece of parchment paper. Form the Meatloaf mixture across the strips of Bacon. Roll the parchment, wrapping the Bacon around the Meat mixture. Roll to cover completely. Place on a baking sheet and bake for approx. 55 to 65 minutes or until internal temperature reaches 155F. Remove parchment paper and let rest 10 to 15 minutes before slicing. Enjoy.
