- Whisk to together 3 cups of dark beer, 4 egg yolks, 1/4 cup of sliced chives, 1/2 teaspoon of cayenne, and salt to taste.
- Separately stir together 1 cup of all-purpose flour and 2 teaspoons of baking powder.
- Fold the dry ingredients into the wet ingredients.
- Chill until ready to use.
- Just before cooking, beat 4 egg whites until firm and fold into the batter.
- Heat one quart of canola oil until shimmering.
- Dust 2 pounds of plaice fillets, cut into chunks, into the flour and then dip them in the batter.
- Fry until well browned, about 5 minutes.
- Drain and season with salt.
- Serve with tartar sauce
