1. Whisk to together 3 cups of dark beer, 4 egg yolks, 1/4 cup of sliced chives, 1/2 teaspoon of cayenne, and salt to taste.
  2. Separately stir together 1 cup of all-purpose flour and 2 teaspoons of baking powder.
  3. Fold the dry ingredients into the wet ingredients.
  4. Chill until ready to use.
  5. Just before cooking, beat 4 egg whites until firm and fold into the batter.
  6. Heat one quart of canola oil until shimmering.
  7. Dust 2 pounds of plaice fillets, cut into chunks, into the flour and then dip them in the batter.
  8. Fry until well browned, about 5 minutes.
  9. Drain and season with salt.
  10. Serve with tartar sauce
